Synopsis:

Alain Passard has made vegetables the star of the plate. Having entered the culinary world at the age of 14, much like others might enter a religious order, Alain Passard trained with some of the greatest chefs before opening his own restaurant, "L'Arpège," on Rue de Varenne in Paris, which has held three Michelin stars for the past ten years. His career is all the more remarkable because he has shaken up the conservative world of haute cuisine: what was once relegated to the side of the plate, he has placed at the center, and he has eliminated red meat, which had previously earned him his reputation as a master of cooking, to make vegetables the undisputed star. To fully embrace this philosophy of working with exceptional produce, he created his own vegetable garden in the Sarthe region, where more than 450 varieties of vegetables are grown for his restaurant. This is the starting point of his inspiration. Between this marvelous garden and his restaurant, one of the most inventive cuisines is created, its reputation resonating throughout the world.
